The duo\u2019s cookbook, <\/span><i><span style=\"font-weight: 400;\">Caribbean Potluck<\/span><\/i><span style=\"font-weight: 400;\">, came out in 2014<\/span><i><span style=\"font-weight: 400;\">, <\/span><\/i><span style=\"font-weight: 400;\">and last year they participated in Island Outpost\u2019s innaugural NyamJam Festival.. They recently dished about the <\/span><a href=\"https:\/\/islandoutpost.com\/outpostings\/five-things-learned-jamaicas-top-food-entrepreneurs\/\"><span style=\"font-weight: 400;\">lessons they\u2019ve learned over the years<\/span><\/a><span style=\"font-weight: 400;\"> being food entrepreneurs on <\/span><i><span style=\"font-weight: 400;\">Outpostings<\/span><\/i><span style=\"font-weight: 400;\">, and now the Rousseaus are back to share their favorite recipe for steamed mahi-mahi. They add some Jamaican flair to the dish with a pimento butter and scotch bonnet peppers before steaming in banana leaves and serving with a coconut lime salsa\u2014and a piping hot scotch bonnet pepper. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\"> Here\u2019s how you can make this fantastic recipe at home!<\/span><\/p>\n<p><b>Herb-Dusted Mahi-Mahi Fillet in Banana Leaves with Coconut Lime Salsa<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Serves 4<\/span><\/p>\n<p><strong><strong>\u00a0<\/strong><\/strong><\/p>\n<p><strong><i>For the fish<\/i><\/strong><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon chopped fresh thyme<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon sliced scallion<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon minced garlic<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd teaspoon sea salt<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd teaspoon freshly ground black pepper<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 teaspoons olive oil<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 tablespoon fresh lime juice, plus more for drizzling<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 pounds mahi-mahi fillets (6 to 8 ounces each)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 banana leaf per filet, cut into 10-inch squares (aluminum foil makes a suitable alternative.)<\/span><\/p>\n<p><strong><strong>\u00a0<\/strong><\/strong><\/p>\n<p><strong><i>For the pimento butter<\/i><\/strong><\/p>\n<p><span style=\"font-weight: 400;\">\u00bc pound (1 stick) unsalted butter<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 teaspoons ground allspice<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 stalks scallion, chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon chopped fresh thyme<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 garlic clove<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Juice of 2 limes<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd teaspoon sea salt<\/span><\/p>\n<p><strong><strong>\u00a0<\/strong><\/strong><\/p>\n<p><strong><i>For the coconut lime salsa<\/i><\/strong><\/p>\n<p><span style=\"font-weight: 400;\">(Makes about 1 \u00bd cups)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 \u00bd cups grated fresh coconut or shredded unsweetened coconut<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoons fresh lime juice (from about 1 \u00bd limes)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 tablespoons currants<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoons diced red onion<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoons chopped fresh cilantro<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd teaspoon ground cumin<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd teaspoon sea salt<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoons olive oil<\/span><\/p>\n<p><strong><strong>\u00a0<\/strong><\/strong><\/p>\n<p><strong><i>For the coconut sauce<\/i><\/strong><\/p>\n<p><span style=\"font-weight: 400;\">(Makes about 1 cup)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 14-ounce can coconut milk<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 tablespoon chopped fresh thyme<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon minced Scotch bonnet<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 teaspoons diced scallion<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon diced onion<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 teaspoon minced garlic<\/span><\/p>\n<p><span style=\"font-weight: 400;\">sea salt and freshly ground black pepper<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Method<\/span><\/p>\n<p><b><b>1. Prepare the fish.<\/b><\/b><\/p>\n<p><span style=\"font-weight: 400;\">In a baking dish or resealable plastic bag, combine the thyme, scallion, garlic, salt, pepper, oil and lime juice. Add the mahi-mahi and marinate in the refrigerator for about 2 hours. Preheat oven to 350<\/span><b>\u00b0<\/b><span style=\"font-weight: 400;\">F or prepare grill for medium heat.<\/span><\/p>\n<p><b>2. Make the pimento butter<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Place the ingredients in a food processor and pulse until well combined.<\/span><\/p>\n<p><b>3. Make the coconut lime salsa<\/b><span style=\"font-weight: 400;\">. i<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a small bowl, combine the coconut, lime juice, currants, red onion, cilantro, cumin, salt and oil. Set aside.<\/span><\/p>\n<p><b>4. Make the coconut sauce.<\/b><\/p>\n<p><span style=\"font-weight: 400;\">In a medium saucepan over medium heat, combine the coconut milk with the thyme, scotch bonnet pepper, scallion, onion and garlic and cook until slightly thickened, about 5 minutes. Season with salt and pepper.<\/span><\/p>\n<p><b><b>5. Wrap the fish.<\/b><\/b><\/p>\n<p><span style=\"font-weight: 400;\">If possible, singe the banana leaves over an open flame. Alternatively, blanch them in a pot of boiling water and grease them lightly with vegetable oil. Place 1 fish fillet inside each banana leaf square, dot with some pimento butter, add a squeeze of fresh lime and roll up each banana leaf to form a package.<\/span><\/p>\n<p><b><b>6. Bake or grill the fish.<\/b><\/b><\/p>\n<p><span style=\"font-weight: 400;\">Place the package seam-side down and bake or grill until cooked through, about 10 to 15 minutes.<\/span><\/p>\n<p><b><b>7. Serve.<\/b><\/b><\/p>\n<p><span style=\"font-weight: 400;\">Cut open the packages, place on serving plates and garnish with the coconut lime salsa.
